Cinnamon Swirl Bread (Bread Machine Recipe)

Directions: Use the Rich Egg Bread recipe for the bread part of this recipe (below the recipe and the post just before this one)

Instead of making this completely in the bread machine you will only make the dough in the machine.

Extra ingredients
1/2 c Raisins (can be omitted)
1/4 c fine sugar
1 1/2 tsp Ground Cinnamon
butter, margarine, or oil to coat
Bread pan (9x5x3 or 8 1/2x 4 1/2x2 1/2)

Grease the bread pan.

After you have placed all the dough ingredients in the machine, you will wait for it to single to place the raisins in.

Mix sugar and Cinnamon together and set on side to be used later.

When dough is done gently push fist into dough to deflate. Place on floured surface. Use either your hands or rolling pin to flatten into a rectangle 18x9 inch (9 inch is about the length of a bread pan). Brush dough with oil/butter/margarine and sprinkle with the sugar and cinnamon mixture.

Roll dough up tightly, beginning at 9 inch side. Pinch edge of dough into roll to seal. Press each end with side of hand to seal; fold ends under loaf. Place loaf, seam side down in pan. cover loosely with with a cloth or plastic wrap and let rise in a warm place for about 1 hour or until doubles.

Move oven rack to middle of the oven. Heat oven to 375 degrees. Bake bread for 30-35 minutes or until load is deep golden brown and sounds hollow when tapped.

When bread is done, remove from pan to wire rack. Brush loaf with butter and cool.


Rich Egg Bread
The original recipe I found in the Betty Crocker Cookbook (Red Book). I've made a few alterations to the recipe.

3 1/4 c Whole Wheat Flour (I grind my own---I want to know what's in my flour)
1/4 c Organic Sugar
1 1/2 tsp Salt
1 package regular or quick active dry yeast (2 1/4 tsp)
1 c + 2Tbsp Very Warm Water (120-130 degrees)
2Tbsp + 2tsp  Oil
1 large Egg

There are two ways that you can do this using a bread machine;
A) Where I live, the altitude is high, so how I make this bread is
1. Place Sugar, Salt, Water, Yeast, and oil in the bread machine pan---allow to sit for 6 minutes---this will help your bread to rise nicely---you'll notice after the time is done there is foam in the pan, that's the yeast activated
2. Add the egg and than the flour
3. If you are making the Cinnamon Swirl Bread you will be setting the machine to dough

B) Back in NY where the altitude is below or at sea level I just read the instructions that the bread machine came with for bread and it always worked---
